I'm not sure if those are intended to be chicken drumsticks, but size-wise they're more plausibly turkey legs. But that's okay, because they're in the New World and turkeys were certainly a thing there. Turkeys ranged as far south as Florida, which is close enough to the Caribbean for this to work, kinda.
