Bearnaise sauce is a sauce made of butter, egg yolks, and vinegar, flavoured with tarragon and shallots.

The chef and food writer, James Beard, often called the father of American gastronomy, once wrote:

I believe that if ever I had to practise cannibalism, I might manage if there were enough tarragon around.

It's clearly quite the herb. And bearnaise is then obviously the sauce of choice for cannibals.

2018-07-06 Rerun commentary: I've no doubt had bearnaise sauce a few times, but honestly I haven't been aware of having tarragon enough to know what sort of aroma and flavour it has. Unlike other herbs such as oregano, basil, rosemary, parsley, dill, and so on where I have enough experience to recognise them immediately, I don't have the same recognition with tarragon.

Maybe I should get some and cook with it a bit.
