Bearnaise sauce is a sauce made of butter, egg yolks, and vinegar, flavoured with tarragon and shallots.
The chef and food writer, James Beard, often called the father of American gastronomy, once wrote:
I believe that if ever I had to practise cannibalism, I might manage if there were enough tarragon around.It's clearly quite the herb. And bearnaise is then obviously the sauce of choice for cannibals.
